- 1/2 cup granulated sugar

- 2 tablespoons heavy cream
- Pinch of salt
- 2 tablespoons slivered almonds (optional for garnish)
Instructions
- Prepare the Pistachio Filling
- In a food processor, grind the pistachios into fine crumbs.
- Add granulated sugar and pulse to combine.
- Add softened butter, egg, almond extract, and vanilla extract. Blend until a smooth paste forms.
- Prepare the Croissants
- Slice croissants in half horizontally.
- If fresh, let them sit uncovered for a few hours to firm up.
- Fill the Croissants
- Spread a generous layer of pistachio filling on the bottom half of each croissant.
- Place the top half back on and gently press down.
- Make the Pistachio Cream Topping
- In a bowl, mix powdered sugar, heavy cream, and a small amount of pistachio paste until smooth.
