- 1/2 cup small sago pearls (tapioca pearls)
- 1 cup coconut milk
- 1/2 cup evaporated milk (optional)
- 1/4 cup condensed milk or sugar (adjust to taste)
- 4 cups water (for boiling sago)
- Ice cubes (optional)
Instructions
- Prepare the Sago Pearls: Bring a pot of water to a boil and add the sago pearls. Stir occasionally to prevent sticking. Boil for about 10-15 minutes or until the pearls turn translucent. Turn off the heat and let them sit for another 5 minutes.
- Rinse and Drain: Drain the sago pearls and rinse them under cold running water to remove excess starch. Set aside.
- Prepare the Mangoes: Peel and dice the mangoes. Reserve some for garnish and blend the rest into a smooth puree.
- Mix the Ingredients: In a large bowl, combine the mango puree, coconut milk, evaporated milk (if using), and condensed milk or sugar. Stir well until evenly mixed.
- Add Sago Pearls: Gently fold in the cooked sago pearls, ensuring they are well distributed.
- Chill and Serve: Refrigerate the mixture for at least an hour before serving. Serve chilled with fresh mango pieces and optional ice cubes for extra freshness.
