Instructions

  1. Prepare the Dough: In a saucepan over medium heat, combine water, butter, sugar, and salt. Stir until the butter melts and the mixture reaches a gentle simmer.
  2. Incorporate the Flour: Remove from heat and add the flour all at once. Stir vigorously with a wooden spoon until the mixture forms a smooth dough and pulls away from the sides of the pan.
  3. Cool and Add Eggs: Let the dough cool for a few minutes. Add the eggs one at a time, mixing well after each addition until the dough is smooth and glossy. Stir in the vanilla extract.
  4. Heat the Oil: Pour vegetable oil into a deep pan and heat to 375°F (190°C).
  5. Pipe the Churros: Transfer the dough into a piping bag fitted with a star-shaped tip. Pipe 4-6 inch strips of dough directly into the hot oil, cutting with scissors.
  6. Fry Until Golden: Fry the churros in batches, turning occasionally, until they are golden brown and crisp.
  7. Drain and Coat: Remove the churros and drain on a paper towel. While still warm, roll them in a cinnamon-sugar mixture.
  8. Serve and Enjoy: Serve immediately with chocolate sauce, caramel, or dulce de leche for dipping.
