Description

Instructions

  • Preheat & Prepare: Preheat oven to 350°F (175°C). Grease and flour a loaf pan.
  • Prepare Cherries: If using fresh cherries, pit and chop them. If using maraschino cherries, drain and pat dry.
  • Mix Dry Ingredients: In a large bowl, whisk together flour, sugar, baking powder, and salt.
  • Combine Wet Ingredients: In another bowl, beat eggs, then mix in milk, melted butter, almond extract, and vanilla extract. Stir well.
  • Combine Batter: Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. Do not overmix.
  • Fold in Cherries & Almonds: Gently fold in chopped almonds and cherries, ensuring even distribution.
  • Transfer to Pan & Bake: Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool & Glaze (Optional): Let the bread cool in the pan for 10 minutes, then transfer to a wire rack. If desired, mix powdered sugar with a little milk to make a glaze, drizzle over the loaf, and sprinkle with sliced almonds.
  • Slice & Serve: Enjoy fresh, toasted, or with a smear of butter.
