Description

Ingredients

  • 1 cup of rice
  • 2 cups of milk
  • 3/4 cup of sugar
  • 3 large eggs
  • 1 teaspoon of vanilla extract
  • Zest of 1 lemon
  • 1 pie crust (store-bought or homemade)
  • 1 tablespoon of butter (for greasing)

Instructions

  1. Rinse 1 cup of rice under cold running water.
  2. In a saucepan, combine the rice with 2 cups of milk and bring to a gentle boil.
  3. Reduce the heat to low, cover, and let it simmer until tender (around 20 minutes).
  4. In a mixing bowl, whisk together 3 large eggs, 3/4 cup of sugar, 1 teaspoon of vanilla, and lemon zest.
  5. Fold the cooked rice into the egg mixture until well combined.
  6. Preheat the oven to 350°F (175°C) and grease a pie dish with butter.
  7. Pour the rice mixture into the prepared pie crust and spread it evenly.
  8. Bake for approximately 45 minutes until the top is golden brown and the filling is set.
