- 1 cup of rice
- 2 cups of milk
- 3/4 cup of sugar
- 3 large eggs
- 1 teaspoon of vanilla extract
- Zest of 1 lemon
- 1 pie crust (store-bought or homemade)
- 1 tablespoon of butter (for greasing)
Instructions
- Rinse 1 cup of rice under cold running water.
- In a saucepan, combine the rice with 2 cups of milk and bring to a gentle boil.
- Reduce the heat to low, cover, and let it simmer until tender (around 20 minutes).
- In a mixing bowl, whisk together 3 large eggs, 3/4 cup of sugar, 1 teaspoon of vanilla, and lemon zest.
- Fold the cooked rice into the egg mixture until well combined.
- Preheat the oven to 350°F (175°C) and grease a pie dish with butter.
- Pour the rice mixture into the prepared pie crust and spread it evenly.
- Bake for approximately 45 minutes until the top is golden brown and the filling is set.
Notes
- Let the pie cool at room temperature for at least 30 minutes before serving.
- It can be served warm, at room temperature, or chilled with whipped cream or powdered sugar.
