- 4 cups powdered sugar (for frosting)
- 2 tbsp heavy cream (for frosting)
- Assorted Easter candies (jelly beans, chocolate eggs, marshmallow bunnies, etc.)
Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with pastel cupcake liners.
- Whisk together flour, baking powder, and salt in a medium bowl. In a separate bowl, beat butter and sugar until fluffy, then add eggs and vanilla.
- Alternate mixing dry ingredients and milk into the butter mixture until smooth. Fill cupcake liners 2/3 full.
- Bake for 18-20 minutes until a toothpick comes out clean. Cool completely before frosting.
- For frosting, beat butter until creamy, then gradually add powdered sugar and heavy cream. Mix in green food coloring.
- Pipe frosting using a grass tip nozzle to create a textured ‘grass’ effect. Top with Easter candies.
