Instructions
- Prepare the Batter: In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, salt, and sugar.
- Mix Wet Ingredients: In another bowl, whisk the buttermilk, eggs, melted butter, vanilla extract, vinegar, and red food coloring.
- Combine: Gradually add the wet ingredients to the dry ingredients, stirring gently. Do not overmix to keep the pancakes light and fluffy.
- Preheat Griddle: Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or cooking spray.
- Cook Pancakes: Pour about ¼ cup of batter per pancake onto the griddle. Cook until bubbles appear on the surface, then flip and cook for another 1-2 minutes.

- Serve: Stack pancakes on a plate, drizzle with cream cheese frosting, and add optional toppings like maple syrup, berries, or whipped cream.
Notes
- Chocolate Lovers: Add chocolate chips to the batter.
- Healthier Option: Use whole wheat flour for extra fiber.
- Vegan-Friendly: Substitute buttermilk with almond milk + vinegar and use flax eggs.
- Extra Fluffiness: Beat and fold in egg whites separately before cooking.
