Ingredients
Scale
- 4 large russet potatoes, peeled and cubed
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup shredded sharp cheddar cheese
- 1 cup sour cream
- 4 slices cooked bacon, crumbled (optional for extra flavor)
- Salt and pepper to taste
- Chopped chives or green onions for garnish
Instructions
- Begin by peeling and cubing the potatoes. Add them along with chopped onion and minced garlic into the slow cooker. Season with salt and pepper.
- Pour in the chicken broth so that ingredients are submerged. Cover and cook on high for 4 hours.
- Use an immersion blender to blend the soup until smooth or leave chunky based on your preference.
- Stir in shredded cheddar cheese and sour cream until fully melted and incorporated.
- Serve hot, garnished with crumbled bacon, chopped chives, and additional cheese if desired. Enjoy with crusty bread or a side salad.
Notes
- For a thicker soup, mash some of the potatoes more vigorously or add a cornstarch slurry during the last 15 minutes of cooking.
- Can be made dairy-free by substituting cheese and sour cream with dairy-free alternatives.
- Leftovers can be stored in airtight containers in the refrigerator for up to 3 days or frozen for longer shelf life.
