  • 4 dried guajillo chiles
  • 3 dried ancho chiles
  • 4 cloves garlic
  • 1 onion
  • 1 cup beef or chicken broth
  • 2 teaspoons cumin
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • Corn tortillas for serving
  • Fresh cilantro and diced onions for garnish

Instructions

  1. Cut the pork shoulder or beef chuck into manageable chunks. Season generously with salt, pepper, and cumin.

  3. Blend the soaked chiles with garlic, onion, oregano, and broth until smooth.
  4. Pour this sauce over the meat in the crock pot and cook on low for 8 hours, until the meat is fall-apart tender.
  5. Once cooked, shred the meat using forks and mix it well with the sauce for maximum flavor infusion.
  6. Heat the corn tortillas until warm. Dip each tortilla briefly in the remaining birria sauce, then fill with shredded meat.
