Description

Indulge in this Creamy Marry Me Salmon recipe featuring pan-seared salmon fillets in a rich garlic Parmesan cream sauce with sun-dried tomatoes and fresh basil. Ready in under 30 minutes, it’s perfect for weeknight dinners or special occasions!

Ingredients

Scale
  • 4 salmon fillets
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup chicken or vegetable broth
  • 1/2 cup Parmesan cheese, grated
  • 1 tsp Italian seasoning
  • 1/4 tsp red pepper flakes (optional)
  • 1/4 cup fresh basil, chopped
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the salmon: Pat the salmon fillets dry with a paper towel and season them with salt and black pepper.
  2. Sear the salmon: Heat olive oil in a skillet over medium-high heat. Cook the salmon fillets for about 4-5 minutes on each side until golden brown and cooked through. Remove and set aside.
  3. Make the sauce: In the same skillet, melt butter and sauté minced garlic until fragrant. Add the sun-dried tomatoes and cook for another minute.
  4. Add liquids and seasoning: Pour in the heavy cream and broth, stirring to combine. Add Parmesan cheese, Italian seasoning, and red pepper flakes if using. Let the sauce simmer until thickened.
  5. Combine everything: Return the salmon to the skillet, spooning the sauce over the fillets. Simmer for 2-3 minutes to let the flavors meld.
  6. Garnish and serve: Sprinkle fresh basil on top and serve with your choice of pasta, rice, or vegetables.

Notes

  • Dairy-free option: Use coconut cream and nutritional yeast instead of heavy cream and Parmesan.
  • Spicy version: Add extra red pepper flakes or a dash of hot sauce for more heat.
  • Low-carb: Serve over cauliflower rice or zucchini noodles instead of pasta.
  • Extra veggies: Add spinach, mushrooms, or bell peppers for a heartier dish.
