- 4 salmon fillets
- 2 tbsp olive oil
- 1 tbsp butter
- 3 cloves garlic, minced
- 1/3 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1/2 cup chicken or vegetable broth
- 1/2 cup Parmesan cheese, grated
- 1 tsp Italian seasoning
- 1/4 tsp red pepper flakes (optional)
- 1/4 cup fresh basil, chopped
- Salt, to taste
- Black pepper, to taste
Instructions
- Prepare the salmon: Pat the salmon fillets dry with a paper towel and season them with salt and black pepper.
- Sear the salmon: Heat olive oil in a skillet over medium-high heat. Cook the salmon fillets for about 4-5 minutes on each side until golden brown and cooked through. Remove and set aside.
- Make the sauce: In the same skillet, melt butter and sauté minced garlic until fragrant. Add the sun-dried tomatoes and cook for another minute.
- Add liquids and seasoning: Pour in the heavy cream and broth, stirring to combine. Add Parmesan cheese, Italian seasoning, and red pepper flakes if using. Let the sauce simmer until thickened.
- Combine everything: Return the salmon to the skillet, spooning the sauce over the fillets. Simmer for 2-3 minutes to let the flavors meld.
- Garnish and serve: Sprinkle fresh basil on top and serve with your choice of pasta, rice, or vegetables.
