Scale
- 2 tbsp butter

- 2 tbsp all-purpose flour
- 1 cup whole milk
- ½ cup heavy cream
- ½ cup Parmesan cheese, grated
- ¼ cup mozzarella cheese (optional, for extra creaminess)
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp Italian seasoning
- ¼ tsp red pepper flakes (optional, for a slight kick)
Instructions
- Melt the Butter – In a medium saucepan over medium heat, melt the butter until fully liquefied.
- Sauté the Garlic – Add the minced garlic and sauté for about 30 seconds until fragrant. Be careful not to burn it.
- Make a Roux – Sprinkle in the flour and whisk continuously for about one minute to cook slightly without browning.
- Incorporate the Dairy – Slowly add the whole milk and heavy cream, whisking constantly to prevent lumps.
- Simmer and Thicken – Reduce heat to low and cook for about 3-5 minutes, stirring frequently, until thickened.
- Add the Cheese – Stir in Parmesan and mozzarella (if using) until fully melted and incorporated.
- Season – Add salt, black pepper, Italian seasoning, and red pepper flakes (if desired). Adjust seasoning to taste.
- Cool Slightly – Remove from heat and let cool for a few minutes before using.
Notes
- Herbed White Sauce – Add fresh basil, oregano, or thyme for an herby kick.
- Cheesy Delight – Use a mix of cheddar, provolone, or Gouda for extra richness.
- Spicy Version – Increase red pepper flakes or add cayenne for a bold twist.
- Dairy-Free Option – Swap butter for olive oil, use almond or oat milk, and choose a dairy-free cheese.
