Description

Creamed spinach is a luxurious and velvety side dish that brings elegance to any meal.   • 1 lb fresh spinach leaves, washed and stems removed
  • 2 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ¼ tsp nutmeg (optional)
  • Salt and black pepper to taste

Instructions

  1. Wash spinach thoroughly and remove stems. Blanch in boiling water for 30 seconds, then transfer to ice water. Drain and squeeze out excess water.
  2. Melt butter in a skillet over medium heat. Sauté garlic and onion until fragrant, about 2-3 minutes.
  3. Add chopped spinach to the skillet and stir to coat with butter mixture.
  4. Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese and nutmeg (if using). Season with salt and pepper.
  5. Cook for 3-5 minutes until the sauce thickens slightly. Serve warm.

Notes

  • For a vegan version, substitute butter with olive oil, heavy cream with coconut milk, and Parmesan with nutritional yeast.
  • To prevent watery spinach, squeeze out as much moisture as possible after blanching.
