Description

Cowboy Breakfast Sliders are a hearty, crowd-pleasing breakfast packed with eggs, bacon or sausage, and melted cheese on soft slider buns. Perfect for meal prep, game days, or breakfast on the go!

Ingredients

Scale
  • 12 slider buns
  • 8 large eggs
  • 1/3 cup whole milk
  • 8 slices bacon or 1/2 lb breakfast sausage
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 4 tbsp butter (melted)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 2 tbsp chopped green onions or chives
  • 1 small jalapeño, sliced (optional)
  • 1 tbsp maple syrup or honey (optional)
  • Salt and black pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a baking dish.
  2. Cook the bacon or sausage in a skillet over medium heat until crispy (for bacon) or fully browned (for sausage). Drain excess grease and set aside.
  3. Whisk the eggs with milk, salt, pepper, and a pinch of garlic powder. Cook over medium-low heat in a non-stick skillet, stirring until scrambled and fluffy. Remove from heat.
  4. Assemble the sliders:
    • Slice the slider buns in half horizontally and place the bottom half in the baking dish.
    • Layer half of the shredded cheddar and Monterey Jack cheese over the buns.
    • Spread the scrambled eggs evenly over the cheese.
    • Sprinkle the cooked bacon or sausage on top.
    • Add jalapeños or green onions if desired.
    • Top with the remaining cheese.
    • Place the top half of the buns over the layers.
  5. Prepare the butter glaze: Mix melted butter with garlic powder, onion powder, paprika, and maple syrup or honey.
  6. Brush the butter glaze generously over the top of the buns.
  7. Bake for 15-20 minutes or until the cheese is melted and the buns are golden brown.
  8. Serve warm with your favorite dipping sauces or condiments.
