Cowboy Breakfast Sliders are a hearty, crowd-pleasing breakfast packed with eggs, bacon or sausage, and melted cheese on soft slider buns. Perfect for meal prep, game days, or breakfast on the go!

- 12 slider buns
- 8 large eggs
- 1/3 cup whole milk
- 8 slices bacon or 1/2 lb breakfast sausage
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 4 tbsp butter (melted)
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp paprika
- 2 tbsp chopped green onions or chives
- 1 small jalapeño, sliced (optional)
- 1 tbsp maple syrup or honey (optional)
- Salt and black pepper to taste
Instructions
- Preheat the oven to 350°F (175°C) and lightly grease a baking dish.
- Cook the bacon or sausage in a skillet over medium heat until crispy (for bacon) or fully browned (for sausage). Drain excess grease and set aside.
- Whisk the eggs with milk, salt, pepper, and a pinch of garlic powder. Cook over medium-low heat in a non-stick skillet, stirring until scrambled and fluffy. Remove from heat.
- Assemble the sliders:
- Slice the slider buns in half horizontally and place the bottom half in the baking dish.
- Layer half of the shredded cheddar and Monterey Jack cheese over the buns.
- Spread the scrambled eggs evenly over the cheese.
- Sprinkle the cooked bacon or sausage on top.
- Add jalapeños or green onions if desired.
- Top with the remaining cheese.
- Place the top half of the buns over the layers.
- Prepare the butter glaze: Mix melted butter with garlic powder, onion powder, paprika, and maple syrup or honey.
- Brush the butter glaze generously over the top of the buns.
- Bake for 15-20 minutes or until the cheese is melted and the buns are golden brown.
- Serve warm with your favorite dipping sauces or condiments.
