  • Yield: 6-8 servings 1x

Description

A classic roast pork loin recipe with a golden-brown crust and juicy interior, served with a rich homemade gravy. Perfect for family dinners, holiday feasts, or special gatherings.

Ingredients

Scale
  • 1 (3-4 lb) pork loin roast
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 1 onion, roughly chopped
  • 2 carrots, roughly chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups chicken or vegetable broth
  • 2 tbsp all-purpose flour
  • 2 tbsp butter
  • 1 tsp Worcestershire sauce

Instructions

Preparing the Pork Loin

  1. Preheat your oven to 375°F (190°C).
  2. Pat the pork loin dry with paper towels to ensure a good sear.
  3. Rub the pork with olive oil, minced garlic, salt, and black pepper.
  4. Chop fresh rosemary and thyme, then sprinkle over the pork for added flavor.
  5. Place the pork loin in a roasting pan, fat side up, ensuring even cooking.
  6. Surround the roast with roughly chopped onions and carrots to enhance the flavor.

Roasting the Pork
7. Insert the roasting pan into the preheated oven and cook for about 50-60 minutes or until the internal temperature reaches 145°F (63°C).
8. Baste the pork occasionally with pan juices to keep it moist.
9. Once done, transfer the pork to a cutting board and let it rest for 10-15 minutes before slicing.

Making the Simple Gravy
10. Remove the vegetables from the roasting pan and set aside.
11. In a small saucepan, melt butter over medium heat and whisk in flour to create a roux.
12. Gradually add the pan drippings and chicken broth, stirring constantly to avoid lumps.
13. Add Worcestershire sauce for depth of flavor and simmer until thickened.
14. Strain the gravy for a smooth texture and season with salt and pepper to taste.

Serving
15. Slice the rested pork loin into even pieces and serve with warm gravy drizzled on top.
16. Pair with mashed potatoes, roasted vegetables, or a fresh green salad for a complete meal.

Notes

  • Herb Substitutes – Swap rosemary and thyme for sage or oregano for a different flavor profile.
  • Spiced-Up Version – Add smoked paprika and cumin for a bolder taste.
  • Sweet and Savory – Glaze the pork with honey or maple syrup before roasting.
  • Apple-Infused – Add apple slices to the roasting pan for a slight sweetness that complements the pork.
