For the Wraps:
- 4 large flour or whole wheat tortillas
- 1/2 cup hummus
- 1/4 cup goat cheese, crumbled
- 1 cup fresh arugula or spinach
- 1/2 cup cherry tomatoes, sliced
- 1/4 red onion, thinly sliced
- 1 avocado, sliced
Instructions
Step 1: Prepare the Chimichurri Sauce
- Finely chop parsley and cilantro.
- Mince garlic and combine with the herbs in a bowl.
- Add red wine vinegar, olive oil, red pepper flakes, lemon juice, salt, and pepper.
- Mix well and set aside to allow flavors to meld.
Step 2: Cook the Chicken
- In a bowl, toss the chicken with olive oil, minced garlic, paprika, cumin, salt, and pepper.
- Heat a skillet over medium-high heat and cook the chicken for about 6-8 minutes, or until fully cooked and slightly browned.
- Remove from heat and set aside.
Step 3: Assemble the Wraps
- Lay a tortilla flat and spread a generous layer of hummus.
- Crumble goat cheese evenly over the hummus.
- Add a handful of fresh arugula or spinach.
- Layer sliced cherry tomatoes, red onion, and avocado onto the wrap.
- Add the cooked chicken strips.
- Drizzle the prepared chimichurri sauce over the filling.
Step 4: Wrap and Serve
- Fold the sides of the tortilla inward, then roll it tightly from the bottom up.
- Slice in half and serve immediately or wrap in foil for later.
