- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 4 large flour tortillas
- 2 cups shredded Monterey Jack or cheddar cheese
- 1/4 cup chopped fresh cilantro (optional)
- Sour cream, salsa, or guacamole for serving
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sliced bell peppers and onions, cooking until softened and slightly charred (5-7 minutes). Remove and set aside.
- In the same skillet, add the remaining olive oil and chicken strips. Season with chili powder, cumin, paprika, garlic powder, salt, and black pepper. Cook until fully done (6-8 minutes). Remove from heat.
- Place a tortilla on a clean surface and sprinkle half with shredded cheese. Add a layer of cooked chicken and sautéed vegetables, then top with more cheese and fresh cilantro if desired. Fold the tortilla in half.
- Heat a clean skillet over medium heat and lightly grease it. Cook the folded quesadilla for 2-3 minutes per side until golden brown and the cheese is melted. Repeat with remaining tortillas.
- Slice into wedges and serve with sour cream, salsa, or guacamole.
