  • 1 cup shredded Monterey Jack cheese
  • 1 small onion, diced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Cook and shred the chicken, then set aside.
  2. Cook the rice according to package instructions or use pre-cooked rice.
  3. In a skillet, heat olive oil over medium heat, sauté diced onion until translucent.
  4. Add cumin, chili powder, salt, and pepper, stirring for 1 minute.
  5. Pour in enchilada sauce and simmer for 2-3 minutes.
