  • Total Time: 45 minutes
  • Yield: 6-8 servings 1x

Description

Cheeseburger soup is a rich and creamy dish featuring ground beef, cheddar cheese, potatoes, and a flavorful broth. This easy, family-friendly recipe is perfect for cold days and reheats well for leftovers.

Ingredients

Scale
  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 3 cups potatoes, diced
  • 1 cup carrots, diced
  • 1/2 cup celery, chopped
  • 4 cups chicken or beef broth
  • 2 cups milk or heavy cream
  • 2 cups shredded cheddar cheese
  • 3 tbsp butter
  • 1/4 cup flour
  • 1 tbsp Worcestershire sauce
  • 1 tsp mustard
  • Salt and pepper, to taste
  • Optional toppings: bacon bits, diced pickles, chopped green onions, croutons

Instructions

  1. Cook the Beef: In a large pot, cook the ground beef over medium heat until browned. Drain excess grease and set aside.
  2. Sauté the Vegetables: In the same pot, melt butter and sauté onions, garlic, carrots, and celery until soft.
  3. Add Potatoes and Broth: Stir in diced potatoes and pour in the broth. Bring to a boil, then reduce heat and let it simmer until the potatoes are tender.
  4. Prepare the Roux: In a separate pan, melt butter and whisk in flour. Cook for a minute, then slowly whisk in milk or heavy cream to create a thickened mixture.
  5. Combine Ingredients: Pour the roux into the soup and stir well. Add back the cooked beef, Worcestershire sauce, mustard, salt, and pepper.
  6. Add Cheese: Gradually stir in shredded cheddar cheese until melted and smooth.
  7. Serve: Ladle the soup into bowls and garnish with your favorite toppings like crispy bacon, diced pickles, or green onions.

Notes

  • Low-Carb Option: Swap potatoes for cauliflower florets to reduce carbs.
  • Spicy Version: Add diced jalapeños or a pinch of cayenne pepper for heat.
  • Vegetarian: Replace ground beef with plant-based crumbles and use vegetable broth.
  • Different Cheeses: Try a mix of cheeses like Monterey Jack, Swiss, or pepper jack for a unique flavor.
  • Thicker Soup: Add more cheese or reduce the liquid slightly for a thicker consistency.
