Instructions

  1. Cook the Sausage: In a large pot or Dutch oven, heat butter or olive oil over medium heat. Add sliced sausage and cook until browned. Remove and set aside.
  2. Sauté the Vegetables: In the same pot, add diced onion, celery, and carrots. Cook until softened, then stir in minced garlic and Cajun seasoning.
  3. Make the Base: Sprinkle flour over the vegetables and stir to coat. Cook for 1-2 minutes, then slowly pour in the chicken broth, stirring continuously to prevent lumps.
  4. Add the Potatoes: Stir in diced potatoes, salt, black pepper, and paprika. Bring to a simmer and cook for 15-20 minutes, or until potatoes are tender.
  5. Make It Creamy: Stir in heavy cream and return the cooked sausage to the pot. Simmer for another 5 minutes.
