Instructions
- Cook the Sausage: In a large pot or Dutch oven, heat butter or olive oil over medium heat. Add sliced sausage and cook until browned. Remove and set aside.
- Sauté the Vegetables: In the same pot, add diced onion, celery, and carrots. Cook until softened, then stir in minced garlic and Cajun seasoning.
- Make the Base: Sprinkle flour over the vegetables and stir to coat. Cook for 1-2 minutes, then slowly pour in the chicken broth, stirring continuously to prevent lumps.
