- 4 cups beef or vegetable broth
- ¾ cup white rice
- 1 tbsp Worcestershire sauce
- 1 tsp Italian seasoning
- ½ tsp paprika
- 2 bay leaves
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Sauté the Aromatics: Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, sauté until fragrant and translucent.
- Brown the Meat: Add ground beef or turkey and cook until browned, breaking it into smaller pieces.
- Add Vegetables: Stir in chopped cabbage and carrots, cooking for a few minutes until slightly softened.
- Incorporate Tomatoes & Broth: Pour in diced tomatoes, tomato sauce, and broth. Stir to combine.
- Season the Soup: Add Worcestershire sauce, Italian seasoning, paprika, bay leaves, salt, and pepper. Mix well.
- Simmer: Bring to a boil, then reduce heat and simmer for 25-30 minutes until cabbage and carrots are tender.
- Cook the Rice: Stir in white rice and cook for an additional 15-20 minutes until tender. Add more broth if needed.
- Serve: Remove bay leaves, adjust seasoning, and enjoy!
