Instructions

  1. In a large pot over medium heat, melt the butter. Add the chopped onion and cook until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional 30 seconds.
  2. Stir in the flour and cook for 1-2 minutes, stirring constantly, to form a roux.
  3. Gradually whisk in the broth until smooth. Add the milk and continue to whisk until fully combined.
  4. Add the broccoli florets to the pot. Bring the mixture to a simmer and cook until the broccoli is tender, about 15-20 minutes.
  5. Using an immersion blender, puree the soup until smooth. Alternatively, carefully transfer the soup to a blender in batches and blend until smooth, then return to the pot.
  6. Stir in the shredded cheddar cheese until melted and fully incorporated. Season with salt, pepper, and nutmeg (if using) to taste.
