- 4 cups fresh broccoli florets
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 tablespoons unsalted butter
- 4 tablespoons all-purpose flour
- 2 cups chicken or vegetable broth
- 2 cups whole milk
- 2 cups sharp cheddar cheese, shredded
- Salt and pepper, to taste
- Optional: 1/4 teaspoon ground nutmeg
Instructions
- In a large pot over medium heat, melt the butter. Add the chopped onion and cook until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional 30 seconds.
- Stir in the flour and cook for 1-2 minutes, stirring constantly, to form a roux.
- Gradually whisk in the broth until smooth. Add the milk and continue to whisk until fully combined.
- Add the broccoli florets to the pot. Bring the mixture to a simmer and cook until the broccoli is tender, about 15-20 minutes.
- Using an immersion blender, puree the soup until smooth. Alternatively, carefully transfer the soup to a blender in batches and blend until smooth, then return to the pot.
- Stir in the shredded cheddar cheese until melted and fully incorporated. Season with salt, pepper, and nutmeg (if using) to taste.
- Serve hot, garnished with additional shredded cheese or croutons if desired.
Notes
- For a chunkier soup, reserve some cooked broccoli florets before blending and add them back into the soup after pureeing.
- To make the soup vegetarian, use vegetable broth instead of chicken broth.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently over low heat to prevent the cheese from separating.
