Banana Pudding Poke Cake is a moist, creamy dessert combining soft cake, rich banana pudding, and whipped topping. Easy to make and perfect for parties!”

Ingredients

Scale
  • 1 box yellow cake mix
  • 3 large eggs (or as directed on cake mix)
  • Water (as directed on cake mix)
  • ½ cup vegetable oil (or as directed on cake mix)
  • 1 box (3.4 oz) instant banana pudding mix
  • 2 cups cold milk
  • 1 container (8 oz) whipped topping
  • 1 cup crushed vanilla wafers
  • 2 fresh bananas, sliced
  • Powdered sugar (optional, for garnish)

Instructions

  • Prepare the Cake: Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish. Prepare cake mix according to package instructions with eggs, water, and oil.
  • Bake: Pour batter into the prepared dish and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  • Poke the Cake: Let cake cool slightly. Use the end of a wooden spoon to poke holes evenly across the surface.
  • Prepare Pudding: In a bowl, whisk together instant banana pudding mix and cold milk until smooth and slightly thickened.
  • Fill the Cake: Pour pudding mixture over the warm cake, ensuring it seeps into the holes.
  • Chill: Refrigerate for at least 2 hours to allow pudding to set.
  • Add Toppings: Spread whipped topping evenly over the cake. Sprinkle with crushed vanilla wafers.
  • Garnish & Serve: Top with fresh banana slices and dust with powdered sugar if desired. Serve chilled.

Notes

  • Make-Ahead: This cake tastes even better the next day as flavors meld.
  • Banana Browning Tip: Toss banana slices in lemon juice to prevent browning.
  • Variations:
    • Swap banana pudding for vanilla or butterscotch pudding.
    • Add chopped pecans or walnuts for crunch.
    • Drizzle caramel sauce over the topping for extra richness.
