- 3 garlic cloves, minced

- 4 cups mixed salad greens
- 1 cucumber, sliced
- 1 cup cherry tomatoes, halved
- ½ red onion, thinly sliced
- ¼ cup feta cheese (optional)
- 2 tbsp balsamic vinaigrette
Instructions
- Marinate the chicken by whisking olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Coat chicken and refrigerate for 30 minutes.
- Preheat oven to 375°F (190°C). Bake chicken for 20-25 minutes until internal temp reaches 165°F. Let rest for 5 minutes.
- Toss mixed greens, cucumber, cherry tomatoes, and red onion in a bowl. Slice chicken and add to salad.
- Drizzle with balsamic vinaigrette and sprinkle with feta cheese if desired. Toss gently and serve.
