Ingredients

Scale
  • 3 cups hash browns (frozen or freshly shredded)
  • 6 large eggs
  • 2 tbsp butter or oil
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 cup shredded cheese (optional)
  • 1/2 cup cooked bacon or ham, chopped (optional)
  • 1/4 cup chopped vegetables (such as bell peppers, onions, or spinach)
  • Fresh herbs for garnish (such as chives or parsley)

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a muffin tin.
  2. Prepare the hash browns by squeezing out excess moisture if using fresh or thawed frozen hash browns.
  3. In a bowl, mix the hash browns with melted butter or oil, salt, and pepper.
  4. Press the hash brown mixture firmly into the muffin tin, shaping them into cup-like molds.
  5. Bake for 20-25 minutes or until golden and crisp.
  6. Crack an egg into each cup, then season with salt and pepper. Add cheese, bacon, or vegetables as desired.
  7. Bake again for 12-15 minutes, depending on how runny you prefer your eggs.
  8. Remove from the oven and let cool slightly before loosening them from the tin.
  9. Garnish with fresh herbs and serve warm.

Notes

  • Veggie-Packed: Mix in diced bell peppers, onions, spinach, or mushrooms.
  • Spicy Version: Add a dash of hot sauce or sprinkle with red pepper flakes.
  • Dairy-Free: Skip the cheese or use a plant-based alternative.
