Description

Baked Garlic Butter Potatoes are crispy on the outside, tender on the inside, and coated in a savory garlic butter sauce. These flavorful roasted potatoes are the perfect side dish to complement any meal and easy to prepare with simple ingredients.

Ingredients

Scale
  • 1 lb baby potatoes (or regular potatoes, cut into chunks)
  • 2 tablespoons olive oil
  • 4 tablespoons butter
  • 4 cloves fresh garlic (minced)
  • 2 tablespoons fresh parsley (chopped, for garnish)
  • Salt and pepper to taste
  • 1 teaspoon dried rosemary (or thyme)
  • 1/4 cup Parmesan cheese (optional, for added flavor)
  • 1 tablespoon lemon juice (optional, for a fresh twist)

Instructions

  • Preheat the Oven:

    • Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  • Prepare the Potatoes:

    • Wash baby potatoes thoroughly and cut them in half or quarters. If using regular potatoes, peel and cut them into evenly sized chunks.
  • Make the Garlic Butter Sauce:

    • In a small saucepan, melt the butter and olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes, until fragrant. Be careful not to burn the garlic.
    • Stir in salt, pepper, and rosemary (or thyme). Remove from heat.
  • Toss the Potatoes:

    • Place the cut potatoes in a large bowl and pour the garlic butter mixture over them. Toss until they are evenly coated.
    • For extra flavor, sprinkle grated Parmesan cheese over the potatoes before roasting.
  • Roast the Potatoes:

    • Spread the coated potatoes in a single layer on the prepared baking sheet, ensuring enough space between the potatoes.
    • Roast in the oven for 30-35 minutes, flipping halfway through, until golden brown and crispy on the outside, and fork-tender on the inside.
  • Garnish and Serve:

    • Once done, remove from the oven and transfer to a serving dish. Garnish with fresh parsley and a squeeze of lemon juice for a burst of freshness. Serve immediately.

Notes

  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) for 10-15 minutes to maintain crispiness.
  • Customizations: Add red pepper flakes for a spicy kick or other herbs like thyme or oregano for variety.
