Ingredients
Scale
- 700g boneless chicken thighs, cut into bite-sized pieces
- 1 cup plain yogurt
- 2 tablespoons lemon juice
- 2 teaspoons garam masala
- 2 teaspoons ground cumin
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to taste)
- 1 teaspoon coriander powder
- 4 tablespoons unsalted butter
- 1 large onion, finely chopped
- 4 garlic cloves, minced
- 1 inch ginger, grated
- 1 can (400g) crushed tomatoes
- 1 cup heavy cream or coconut cream
- Salt to taste
- Fresh cilantro, chopped, for garnish
Instructions
- In a large bowl, combine yogurt, lemon juice, garam masala, ground cumin, turmeric, chili powder, and coriander. Add chicken pieces and coat well. Cover and marinate in the refrigerator for at least 1 hour or overnight for maximum flavor.
- Heat 2 tablespoons of butter in a large skillet over medium heat. Add marinated chicken and cook until golden brown and cooked through, about 8-10 minutes. Remove and set aside.
- In the same skillet, add remaining butter. Sauté chopped onion until translucent. Stir in garlic and ginger, cooking for another minute until fragrant. Pour in crushed tomatoes and simmer for 10-15 minutes until thickened.
- Add cooked chicken back into the sauce. Stir in heavy cream or coconut cream. Simmer for 5 minutes and season with salt to taste. Garnish with chopped cilantro before serving.
Notes
- Marinate the chicken overnight for deeper flavor and more tender meat.
- Adjust spice levels depending on your heat preference by adding more or less chili powder.
- For a smoky flavor, grill the marinated chicken before adding it to the sauce.
- Use fresh herbs and ingredients for optimal freshness and flavor.
- Serve with basmati rice and naan bread for a complete meal.
