Instructions

  1. In a large, clean mixing bowl, beat the egg whites on medium speed until foamy. Add the cream of tartar and salt, then continue beating until soft peaks form. Gradually add 1 cup of sugar, a little at a time, while beating on high speed until stiff, glossy peaks form. Mix in the vanilla and almond extracts.
  2. Sift the remaining ½ cup of sugar with the cake flour. Gently fold the dry ingredients into the whipped egg whites in small batches, using a spatula. Be careful not to deflate the mixture—fold just until combined.
  3. Pour the batter into an ungreased angel food cake pan. Smooth the top with a spatula and gently tap the pan to remove any air bubbles. Bake at 350°F (175°C) for 35–40 minutes, or until the top is golden brown and springs back when lightly touched.
  4. Once baked, invert the cake pan onto a cooling rack and let it cool completely (about 1 hour). Run a knife around the edges to release the cake. Top with fresh berries and a dusting of powdered sugar before serving.
