Description

This Cabbage Bread Recipe delivers a savory and satisfying experience, combining the sweetness of cabbage with the comforting texture of homemade bread. Perfect for sandwiches, toast, or alongside soup.

Ingredients

Scale
  • 1 medium head of cabbage, shredded
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1/4 cup warm water
  • 1 tsp sugar
  • 3 cups all-purpose flour
  • 1 1/4 cups warm milk
  • 2 tbsp melted butter, for brushing

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add shredded cabbage, salt, and pepper. Sauté until tender and slightly caramelized, about 10-15 minutes. Remove from heat and let cool slightly.
  2. In a small bowl, dissolve sugar in warm water. Sprinkle yeast over the water and let stand for 5-10 minutes, until foamy.
  3. In a large mixing bowl, combine flour and warm milk. Add the yeast mixture and mix well. Incorporate the sautéed cabbage into the dough. Mix until a shaggy dough forms.
  4. Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, until smooth and elastic. Place the dough in a greased bowl, turning to coat. Cover with a clean cloth and let rise in a warm place for 1-1.5 hours, or until doubled in size.
  5. Preheat oven to 375°F (190°C). Punch down the dough and shape into a loaf. Place in a greased bread pan. Let rest for 15 minutes. Brush with melted butter and bake for 30-35 minutes, or until golden brown. Cool in pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • Don’t Overcook the Cabbage: Sauté until tender but still has some bite.
  • Ensure Yeast is Active: Check that your yeast is active before adding it to the flour mixture to ensure a good rise.
  • Proper Kneading: Kneading the dough well is crucial for developing gluten.
  • Cool Completely: Allow the cabbage bread to cool completely before slicing.
